Key Responsibilities
- Direct the brigade and supervise daily output
- Run lunch and dinner service seven days a week
- Organise preparation, service and workflow
- Hold standards on food quality, presentation and portions
- Handle prep lists, stock rotation, ordering and wastage
- Meet food safety and workplace safety standards, and develop, train and mentor the kitchen team
Requirements & Eligibility
- Proven record as a Sous Chef, Assistant Kitchen Manager or senior kitchen supervisor
- Experience in a commercial pub kitchen turning out about 1,000 meals a week or more
- Strong leadership skills
- Sound understanding of food costs and portion control
- Sound understanding of stock management
- Able to own kitchen operations without being constantly supervised
