Indian Cuisine Chef

Visa sponsorship

Hospitality · Mackay, QLD, Australia · Full-Time · Discussed at interview · Visa: Employer sponsored

Mackay has a hospitality business that needs experienced Indian cooks on permanent contracts. The vacancies are for a Curry Chef or Cook, a Tandoori Chef or Cook and a Sous Chef for Indian cuisine.

The kitchen turns out genuine Indian food at speed, so consistency, presentation and routine matter. Sponsorship can be offered to suitably qualified overseas applicants who satisfy Australian visa requirements, and the skills assessment and English test scores they need are set out in the requirements.

Cooks who list the dishes they do best, their tandoor experience, the kitchens they have run and any cookery qualification tend to stand out. Turn that into a clean, readable chef CV before you apply.

Key Responsibilities

  • Cook the complete Indian menu, from curries, tandoori items and sauces to breads, rice, entrees and desserts, following authentic recipes
  • Light, run and look after tandoor ovens wherever the menu needs them
  • Serve each dish to the house recipe with the right portion and presentation, checking preparation and plating for consistency
  • Take part in menu planning, keeping ingredient and labour costs in mind
  • Keep stock at sensible levels and waste low
  • Inspect ingredients for freshness and hold food in suitable temperature-controlled storage
  • Maintain hygiene, cleanliness and safety, with equipment and work areas kept spotless
  • Supervise and coach junior cooks, stepping in to support them when needed
  • Handle food quality complaints and guest feedback with calm professionalism
  • Plan daily and weekly kitchen production with management, working in an organised and punctual way in a fast-paced commercial kitchen

Requirements & Eligibility

  • At least three years of experience cooking authentic Indian cuisine
  • Previous work as an Indian Curry Chef, Tandoori Chef, Indian Cook or Sous Chef
  • A Commercial Cookery or Hospitality qualification relevant to the position
  • Confident with traditional Indian methods and authentic recipes
  • Excellent organisation and communication, with the stamina for busy, high-volume service
  • Serious about food safety, hygiene and workplace health and safety
  • Happy to supervise and train junior kitchen staff where required
  • For overseas applicants, a positive skills assessment is required, and an IELTS score of 5.5 or 6.0 in each module, or an equivalent PTE score, is required
