Cairns is calling for a chef ready to run the kitchen. You would steer culinary direction, team performance and everyday standards at a premium Queensland venue, cooking in a modern Japanese and Asian-inspired style with menu development and high-volume service in the mix.
Sponsorship available to the right candidate following successful completion of probation. The business wants to see proof of your leadership record and wider experience.

Key Responsibilities
- Take responsibility for kitchen performance and the flow of each day
- Lead, coach and grow the cooks
- Create seasonal, contemporary menus and put them on the pass
- Add Japanese technique and Asian-inspired flavour where it suits a dish
- Keep flavour, quality and plating consistent
- Direct prep and service during peak, high-volume periods
- Monitor food costs, stock levels and budgets, and manage ordering and suppliers
- Keep food safety, hygiene and compliance in order, and improve kitchen systems
- Foster a positive, accountable brigade that sends out food matching the house standard on every plate
Requirements & Eligibility
- A proven record as a Head Chef or Senior Sous Chef, with demonstrable time in a modern, high-end or premium kitchen
- Japanese, Asian or fusion cuisine experience is highly desirable
- Strong evidence that you have led and supervised kitchen teams
- Menu and seasonal concept development experience
- Firm understanding of food safety and hygiene practice
- Experience in managing stock, food costs and kitchen operations
- A strong communicator who develops teams
- Performs well in busy service, with a high level of attention to detail and presentation
- Your professional experience must be supported by suitable employment and experience documentation
