Key Responsibilities
- Take charge of your own section, prep through to service
- Produce quality dishes built on fresh pasta, seafood and seasonal produce
- Cook consistently during high-volume services
- Maintain excellent taste, presentation and portion control
- Complete mise en place, leaving the section fully ready
- Collaborate with the chefs and the team, and coach cooks with less experience
- Meet food safety, hygiene and cleanliness requirements
- Review how prep is done, keep wastage to a minimum, and stick to the kitchen's procedures and recipes and its quality standards
- Work breakfast, lunch or dinner services depending on the roster, including evening, weekend and public holiday shifts when you are rostered on
Requirements & Eligibility
- Professional background as a Chef de Partie, or in an equivalent kitchen position
- Solid history in high-volume commercial kitchens
- Has cooked Italian-inspired cuisine
- Practical skill preparing fresh pasta and seafood
- Comfortable cooking with seasonal and fresh produce
- Confident leading an individual kitchen section
- Certificate III or IV in Commercial Cookery, or equivalent trade experience
- Teamwork, communication and organisational skills are strong
- Calm and efficient during busy services, with a professional attitude to food quality, hygiene and workplace standards
- Available for nights and weekends, and able to produce evidence of relevant qualifications and professional experience
