Lead the morning kitchen for a growing Wollongong hospitality business. The Breakfast Sous Chef works beside the Head Chef on operations and food direction, supervising a brigade of up to five chefs. Breakfast menus, seasonal specials and improved kitchen routines form part of the role alongside service.

Key Responsibilities
- Run breakfast preparation and service to high standards with the Head Chef on operations and food direction.
- Lead up to five breakfast chefs and train junior cooks.
- Develop and refine breakfast menus and seasonal specials and maintain consistent quality, portions and presentation.
- Organise daily mise en place and control stock, ordering, rotation and waste.
- Maintain hygiene, food safety and cleanliness and improve systems and workflows through busy service.
- Assist the wider kitchen as needed and promote motivated, respectful professionalism.
Requirements & Eligibility
- Minimum 2–5 years' Sous Chef or senior chef experience and proven breakfast or brunch kitchen work with strong modern Australian breakfast and cafe-style cuisine knowledge.
- Previous kitchen supervision or leadership and ability to train, motivate and mentor juniors.
- Strong preparation and presentation, with solid food safety and kitchen hygiene understanding.
- Stock control, purchasing and waste minimisation experience and strong organisation and time management.
- Confident leadership and communication, effective busy service and comfort with early mornings.
- Professional, reliable teamwork and commitment to a long-term Australian hospitality career.
